1. Combine coconut milk, soaked cashews, plant based milk in a blender. Puree until well combined (on the way to smooth).
2. Add the remainder of the ingredients (dates, vanilla extract, lemon and salt).
3. Pour into an a freezer safe container.
Cover and freeze for 2 plus hours.
*Change up the flavor by Using juice as the liquid instead of plant based mylk. Try our digest + refresh pressed juice or even carrot juice !

To soak cashews. place raw unsalted cashews in a container and cover with fresh water. Allow to soften for 2 hours. Discard water and use cashew in recipe above . Not only does this make it creamier, it is also easier on your GI system.
